Bimaris 2005 Chardonnay

Fruit
This wine is made from Chardonnay grapes from Mornington Peninsula.

Maturation
This wine was produced in a range of ways. Some was fermented cool entirely in stainless steel tanks, while some was transferred to French Oak barriques (only 5 - 10% new) part way through its fermentation. Little or no malolactic fermentation was allowed. This treatment adds only a subtle level of oak complexity, making it a very fruit driven style.

Technical Analysis
Alcohol 13.0%.

Bouquet and Palate
This wine embodies the BIMãRIS style, being all about beautiful fruit and easy drinkability with that extra touch of class. It has a classic Peninsula Chardonnay nose of lemons, nectarines and grapefruit with delicate tropical notes. The palate flows cleanly due to minimal oak influence and the finish is crisp. A great partner for fish.
